Double Fried French Fries: The Secret to Perfectly Crispy Homemade Fries
There's nothing quite like biting into a perfectly crispy French fry with a fluffy, tender center. The secret? The double fry method. While it may sound like an extra step, it's the technique restaurants use to create that irresistible crunch—and now you can make them at home using fresh Farm Fresh Direct potatoes.
If you've been searching for the best homemade French fries recipe, this one is guaranteed to become a family favorite.
Why Double Fry French Fries?
Double frying creates the perfect texture by cooking the inside and outside separately. The first fry gently cooks the potato until it's soft and creamy, while the second fry creates that signature golden, crispy exterior. This technique is widely recognized as one of the best ways to achieve restaurant-quality fries at home.
The result? Crispy fries that stay crunchy longer and have a light, fluffy center.
Start with Great Potatoes
The key to incredible French fries starts long before the fryer—it starts with the potato.
Farm Fresh Direct proudly provides premium Colorado-grown Russet potatoes, known for their high starch content and fluffy texture. Russets are considered the gold standard for homemade French fries because they crisp beautifully while maintaining a soft interior.
Fresh, quality potatoes make every bite better.
Tips for the Best Homemade Fries
For perfectly crispy fries every time:
Use fresh Russet potatoes.
Cut the fries into even sizes for consistent cooking.
Pat the potatoes dry before frying.
Fry once at a lower temperature to cook the inside.
Let them rest before frying a second time at a higher temperature for maximum crispiness.
Season immediately after frying while they're still hot.
These simple steps make all the difference.

Ingredients
4 medium russet potatoes
1/4 cup white vinegar
1 tsp. salt, plus more for serving
Peanut oil, for frying
Directions
Step 1
Peel potatoes and cut into 1/4" sticks. Place in a medium bowl and add enough cold water to submerge them completely. Add vinegar and stir to combine.
Step 2
Allow potatoes to brine in refrigerator 30 minutes, then drain and spread onto a paper-towel lined plate in an even layer. Sprinkle with salt and let sit for 5 minutes. Use a paper towel to dab off salt and any excess moisture that has accumulated on the surface.
Step 3
Fill a large dutch oven or a large heavy bottomed pot about 2/3 of the way full with peanut oil and bring to 325° over medium heat. (If you have a candy thermometer, use it to monitor the temperature of the oil!)
Step 4
Carefully add fries to oil and cook for 3 minutes. Drain on a paper towel lined plate and increase oil temperature to 375° and fry 4 minutes more. Transfer to a paper towel lined plate or bowl and sprinkle with salt. Serve hot with ketchup or mayo.
